It is all too common for people to think that it takes too much time to cook healthy food. The truth is that you can make a lot of simple, tasty, healthy, and vegan dishes in less than 30 minutes. One of our favorite vegan recipes to make during the winter is roasted veggies.

Roasting vegetables really brings out some rich and delicious flavors you wouldn’t know even existed!  Click here to see how to make baked sweet potatoes.  There is such a great variety of winter vegetables to choose from during the cold months: carrots, beets, brussel sprouts, zucchini, sweet potato, cauliflower, and broccoli.

Even though roasting vegetables can take up to 30 minutes in total, you don’t have to actively be cooking the whole time.  In other words, you can relax with a book on the couch or put a face mask on while you await your precious veggies in the oven. Roasted veggies only require 5 minutes of your time during prep and the rest of the magic happens in the oven!

Sweet potatoes have a fabulously enhanced flavor after roasting.

Editor’s Note: To test if your vegetables are fully roasted, insert a fork into one piece – if it is soft all the way through, your vegetables are ready. To make them more caramelized, leave them in for 2-5 minutes longer until you start to see them browning.  Roasted veggies may just be the easiest meal we’ve ever had, and the fact that it’s healthy gives you every reason to try!
